Serena’s Squirrel of Chicken Pie

I Put three frozen chicken breasts in crock pot with  chopped celery some chopped onion and a couple tablespoons of butter and a small amount of water.. salt and pepper put lid on

next i brought up some canned squirrel meat and  looked it for bones and took out the bones before pouring into the crock pot

let it cook with lid on , on high until chicken is tender enough to take out and slice in cubes then throw right back into pot with some potatoes cubed

add some cut carrot

put lid on and let cook still on high come back later and take out some of the liquid from the crock in a cup…

you will then add about two tbsp of cornstarch to the cup and mix well and pour into the crock

now take 1 quart of canned green beans and drain then add to crock

add 1 can of drained corn

I would have added a can of drained peas too but I was out  so now toss the veggies into the hot liquid

Put lid back on crock and go make your pie topping

1 1/2 cups self rising flour and about 2-3 tbsp butter using pastry cutter cut butter into flour until resembles cornmeal.

take three eggs and separate yolks.. beat yolks and add to flour with 3/4 cup half and half milk (or reg milk)

beat egg whites till stiff but not dry and fold into mixture

now back to the crock… you will add in pre made chicken gravy that is thick  (I used my leftover chicken gravy from this mornings breakfast) very easy to make recipe is on this site just type in chicken gravy

Fold the chicken gravy into the meat and veggie mixture.. then ladle out into your baking pot

spread your topping over your filling

Bake 25-30 minutes at 375 degrees
