What a terrific recipe….I love quail…
Smothered Quail 

12 quail dressed and cleaned and divided
12 tbs. melted butter
3 tbs. flour
2 ½ c. chicken broth
½ c. sherry
¼ tsp salt
¼ tsp black pepper
Cooked rice
Slow cooker or Oven your choice

Preheat oven 350 deg. Cook 50 min.
Slow cooker med. Heat cook for 5 hrs.

Prepare quail. Brown in a heavy skillet in 12 tbs. butter. Remove quail to a baking dish 9×13 or to slow cooker. Add flour to butter drippings in your skillet and brown. Slowly add chicken broth, sherry, salt and pepper whisking until hot. Pour over cooked quail. Using baking dish for oven cover tightly with tin foil and bake to above instructions. If using slow cooker add quail pour over hot broth mix add lid and cook to above instructions. Serve over a bed of rice. Enjoy.
