Looking for a recipe for barbque goat, grilled or smoked….
  • Richard Bradley Dig a hole in the ground, 4 ft. deep, burn mesquite wood down to coals about 6-8 inches deep. Slather the goat with whatever sauce you like. Wrap goat in wet burlap and dump a lot more sauce on the goat. Cover with piece of tin and fill hole with dirt. Wait 8 hours and the cabrito is super ready. Good luck.
  • Joanna Stringer Goff Ok Richard, thanks, where do I get the burlap? Dad used to do this in the ground like that but I have lost the recipe.
  • Richard Bradley Feed store has burlap bags, probably even find some in Hardware stores i.e. Lowe’s. …. But the real question is do you even have a place you could did the hole? Or would ? LOL you probably will have to stick to more newer conventional cooking equipment.

  • Joanna Stringer Goff Richard we have a friend with a cabin on the beach or in the beach area. We want to do the goat out there. Dad used to fix it this way and I thought he used cheese cloth but I told my friend about the burlap and we are doing it the cowboy or Carlsbad way! @Sernea I don’t think there is a name, when Richard and I were growing up in NM most folks had goat for Christmas. “in the ground cabrito”…so delish..

  • Richard Bradley Come down to Carlsbad, New Mexico. We are 150 miles north of Jurarez, Mexico. I will fix you some cabrito. Or we could smoke it in the smoker. But you have to have it fresh.

My neighbor is 86 years old and she is still teaching me.. she came over this summer and showed me how to make homemade kraut and then I canned it.. .. I am always trying things like turtle soup…. bbq bear ect.. I guess I will be looking for me a GOAT now
