Large fryer

1/2 cup flour

1-1/2 tsp salt

1 tsp paprika

1/8 tsp pepper

3 cups boiling water

3/4 cups rice, washed

1 onion, or 1 clove garlic (optional)

parsley to garnish

1/2 cup fat for frying

 

Cut chicken into serving pieces. Rub with flour into witch seasonings have been mixed thoroughly.

Brown in hot fat until browned.

Reduce heat, add boiling water and onion (or garlic) .

When chicken is about half done. Sprinkle rice over it. Cover it tightly. Cook until tender, rice is fluffy and tender, and water is evaporated. Remove onion or garlic, if used. Serve on hot platter with chicken around mound of rice, garnish with parsley and paprika.
