Serena’s Apple Streusel Pie


this was purely a concoction I made at the spur of the moment so no real recipe here.. but I will do the best I can in relaying to you what I did.

I had two unbaked pie shells

and I had 1 qt of  home canned apple pie filling

and 1 qt of canned thin sliced apples in heavy syrup

I took half of the pie filling and put in each shell

then the took the sliced apples and put in each shell (can add some of the syrup but not much or you would have a runny pie)

I then put in a bowl

1 cup of white sugar

1 cup brown sugar

2 Tbsp self rising flour

mix with fingers and take some of mixture and sprinkle over each pie, pat down with fingers.. you will have some left you will use with your topping so hold on to that..

now sprinkle VERY lightly coconut over top of each pie

dot the top of pie with raisins and a few caramel bites if you have them..

now take a handful of instant oats and add to the reserved mixture for your topping.. add 1 more tbsp of self rising flour and another handful of brown sugar… melt 1/2 stick of butter and blend with fork.

Spread the mixture over both pies best you can..

Now scatter pecans over top

put in a preheated  oven to 400 degrees for about 35-40 minutes (your edges will get brown before it is done so once they start to brown take some aluminum foil and cut into long strips.. put strips around edges of pie lightly …

take out and let set on wire rack to cool… NOTE the cooler it is the more it will firm up.. but if you’re like us and you just can’t wait … eat it warm with vanilla ice cream.. =)
