ROSEMARY ROASTED CHICKEN
1 3 1/2 to 4 -pound whole broiler chicken

rinse and rub with vegetable oil over body..
about a tsp of poultry seasoning

a little garlic powder over top and some Rosemary rub over the body of chicken

I have some Soul Seasoning I shake over top the chicken as well at this point.. if you do not have it you can use Old Bay Seasoning..

place half stick butter inside cavity of the chicken

tie legs together

lightly oil your cookie sheet or pan

Place chicken , breast side up, Roast, uncovered, in a 400 degree oven for 2 hours or until drumstick move easily in their sockets and chicken is no longer pink (must register 180 degrees).

NOTE if chicken gets too browned on top and it is still not registering DONE on the inside you should cover the top of chicken with aluminum foil so it won’t brown anymore..

Remove chicken from oven when done

TIP- I take a little of the stock that is left in the pan and I spoon a couple Tbsp over top of my chicken for extra moistness and flavor.

Cover, let stand for 10 minutes before carving. Serve on platter in center of mounds of seasoned rice.

Serve with Rolls and Country Green Beans and a side of BBQ Sauce for those who may want to dip… but the sauce is not needed for this full flavored chicken.
