PRIME RIB FOR TWO 

Ingredients:

1 rib of prime beef roast (about 2 pounds)

1 Tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon salt

1/8 teaspoon pepper 

Directions: 

Preheat oven to 350 degrees. Rub the rib with olive oil. 

Heat a saucepan over medium-high heat. Add the rib and cook on one side until it is browned and releases easily, about 2 to 3 minutes. Turn and cook until browned on the second side, about 2 minutes longer. 

While the rib is searing, mash the garlic with salt and pepper to form a paste. When the rib is browned, using a knife spread the garlic paste over the meat. Place in a small roasting pan. 

Roast for 25 to 35 minutes until the internal temperature registers 135 degrees for rare, 145 degrees for medium, and 155 degrees for well done. 

Remove from oven and cover. Allow meat to rest or stand for 5 minutes, before slicing and serving meat.
