kid friendly Individual Petite Cherry Cheesecakes very easy to make

2 8 oz pkg. Cream Cheese Softened
3/4 c granulated sugar
2 eggs
1 Tbsp Lemon Juice
1 can cherry pie filling ( or Blueberry whatever)
1 tsp vanilla
24-28 vanilla wafers
24-28 cupcake liner papers

beat cream cheese sugar and eggs until light and fluffy.. (make sure you beat it till it thickens) (I then added 1 Tbsp of Self Rising Flour and beat it in good)
Then add lemon juice and vanilla. Line muffin pans with cupcake papers and place a vanilla wafer at bottom of each. Preheat oven to 350 degrees.Fill each cup 1/2 way full with cream cheese mixture. Bake 20 minutes. Take out carefully when done baking and put on cookie sheet and in freezer or fridge to cool take out and top with cherry pie filling and back in fridge to chill….. serve cold… very good and easy for kid parties ect…..
