This Apple Butter is much like a 19th Century English “apple Marmalade” in both cases the apples are cooked in cider, pulped and mixed with sugar

 

RECIPE to make 3 pints (1 1/2 liters) if you want more DOUBLE recipe

4 lb of ripe apples pealed cored and chopped  (about 4 quarts)

5 cups sweet cider

2 3/4 cups brown sugar

1 tsp ground cloves

2 tsp ground cinnamon

1/2 tsp ground allspice

 

Put the cider into a pan and boil until it is reduced by half, about 30 minutes

 

Add the apples to the cider

Cook slowly,,, until the fruit is tender. about 40 minutes. You will need to stir the mixture frequently.

 

Then work the apple mixture through a sieve and return the puree to the pan with the sugar and spices. Simmer for about 45 minutes, until the mixture thickens, stirring well. Pour the butter into jars and cover. Process. boiling water bath 10 minutes.
