2 T cooking oil

2 lbs. chicken wings

1 T soy sauce

1 garlic clove

1 t minced ginger root

2 T oil

3 T oyster sauce

1 T mirin

1/2 t salt

1 cup water

2 t sesame seed oil

cornstarch and water for thickening 

Combine chicken with soy sauce, garlic and ginger. Set aside for 1/2 hour. Heat wok (or skillet) and add 2 T. cooking oil. Lightly brown chicken on high heat, drain excess oil from wok.

Add oyster sauce, mirin, salt and water. Cover, bring to a boil, and turn temperature down. Cook 15 to 20 min. Turn temperature to high, add sesame seed oil, thicken with cornstarch and water to make a medium thick gravy.
