OATMEAL DR PEPPER CAKE
1 1/2 c. Dr. Pepper
1 c. oatmeal
1/2 c. shortening or butter
1 c. sugar
2 eggs
1 c. brown sugar
1 1/2 c. flour
1/2 tsp. salt
1 tsp. soda
1/2 tsp. cinnamon
1 tsp. vanilla

 

In a medium pan bring to a boil Dr. Pepper.
Pour over oatmeal.
Cream together shortening and sugar.

Add and beat until mixture is fluffy, 2 well beaten eggs.
Sift together and add to cream mixture, brown sugar, flour, salt, soda and cinnamon.
add slowly to mixing bowl

Stir in Dr. Pepper mixture and 1 teaspoon vanilla.
it is an EXTREMELY TASTY batter
Pour into greased and floured 13 x 9 x 2 inch pan.
Recipe said to Bake in 350 degree oven for 40  minutes but my oven only needed 29 minutes so watch it…. you want it MOIST but done and not dry.. . When cake is done remove from oven.
Pour icing over top, but under broiler until top is bubbly and brown

NOTE: Next time try adding raisins and chopped pecans.. also try doubling the icing, except the coconut.. keep it one cup.. makes it even more decadent.. This cake is AWESOME  love the taste texture and smell…

ICING:

5 tbsp. butter

9 tbsp. brown sugar
1 1/2 tbsp. milk
1 c. coconut

 

In small saucepan, heat until melted butter, brown sugar, milk, coconut
. Spread over cake. Put in broiler until brown and bubbly.

 

take out and let cool a little before cutting. it is really good warm but the top crust gets better after it sets up.. so your choice really
