OATMEAL CAKE AND ICING


Cake

1 1/2 cup of boiling water

1 cup oats

1 cup sugar

1/2 cup brown sugar

1/2 cup vegetable oil

2 eggs

1 1/2 cup sifted cake flour or all purpose flour

1 tsp salt

1 tsp soda

1 tsp cinnamon

1/2 tsp nutmeg

choc chips (I was out so used shaved chocolate)

Directions

Heat oven to 350.

Grease and flour 9×13 pan

Pour boiling water over oats. set aside

Combine remaining ingredients. except chocolate chips, in the order listed.

Mix  well with oats

spread in 9×13 pan

spread choc chips over top

Bake at 350 degrees 25-30 minutes

Take out

and pour icing over

and put back in oven till bubbly then broil

Will be very very flavorful and I liken it to a bread pudding  when eaten warm. as it sets will firm more. Delicious.

Icing

1 stick butter

1 tsp vanilla

1 small (6oz) can of evaporated milk

1 cup chopped dates (in this photo I used raisins cause I was out of dates)

1 cup brown sugar

1/2 cup white sugar

1 can coconut

Prepare icing by combining  all ingredients given in pot,

and pour over hot cake . Place right back in oven till bubbly then turn on broiler and let brown.

Note you can also use rolled wheat cereal in this recipe instead of oats. very tasty.
