  • 1 Egg (I use organic)
  • 2 tablespoons whole milk (I used 2% milk)
  • 3/4 cups white sugar
  • 1 tablespoon baking powder
  • 1 teaspoon pure vanilla extract (I use organic)
  • 1/3 teaspoon salt (I used pink Himalayan salt)
  • 1 teaspoon ground cinnamon
  • 3 tablespoons ground Cardamom
  • 2 tablespoons unsalted melted butter
  • 1 cup +2 tablespoons unbleached all-purpose flour
  • 4 medium Paula Red apples (or apple of your choice)
  • 1/2 cup chopped roasted almonds

Directions:  Preheat oven to 350 degrees F

  1. Put parchment paper inside 7-9 in. springform pan. Butter sides and bottom.
  2. Peal, core and dice apples to 1 inch pieces.
  3. Chop almonds, save a few to sprinkle on top before baking.
  4. Mix together all ingredients (the mixture will be thick before adding apples).
  5. Pour mixture into springform pan.
  6. Melt 2 tablespoons butter in microwave, add a few chopped almonds to melted butter, and drizzle on top of batter. Bake 50-60 minutes, checking after 50 minutes to insert toothpick. Remove toothpick – if dry the cake is done.

I was able to lift the cake out of the pan easily with the sides of parchment paper. Also had a clean pan, which I like!  Serves 4-6 people. For a thicker cake, double the ingredients.   ENJOY!!
