An old recipe from Fanny Farmer Cookbook..

This recipe has a fine silky texture and the sweet mild flavor of spice. Very long beating is the secret to it’s tender grain.

makes 1 loaf


HONEY BREAD

2 cups white flour

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1/2 tsp cinnamon (I would make it 1 tsp)

1 tsp ginger (I would cut this down to half)

1/2 cup pure honey

1 egg, slightly beaten

1 cup milk

mixture of sugar and cinnamon to shake over top

Preheat oven to 350

Butter loaf pan

put the flour baking soda, salt, baking powder cinn and ginger in a large bowl.. mix.. add the honey egg and milk, and beat thoroughly with an electric beater for 20 minutes.

Spoon into pan, (I shook cinn sugar over top)  and bake for about 45-50 minutes (my oven was hotter so  less time needed for me as mine was overcooked, I almost took it out earlier but didn’t wish I had..)

Remove from pan and cool on wood block or rack

serve with honey, butter, or jam
