Homemade Blueberry  Muffins

(can sub cherries for blueberries when in season)

1 cup all purpose flour

1 tbsp baking powder

pinch of salt

scant 1/2 cup light brown sugar

1 egg

3/4 cup milk

3 tbsp veg oil

2 tsp ground cinn

1 tbsp quick oats

1 cup of fresh blueberries

 

Preheat oven to 375 grease muffin pan

with electric mixer beat together all ingredients (except for fruit) until smooth

fold in berries into other ingredients just until evenly combined.

 

 

Spoon mixture into muffin pan, Fill two thirds full. Bake for about 25 minutes or according to your oven temp.. test with toothpick when looks done.. cool in muffin pan on wire rack for 5-10 minutes… transfer to wire rack and let cool completely…
