Herb crusted pork loin with potatos and rutabaga, and roasted veggies, and blackberry sauce.

 

I  rolled the pork loin in some of my favorite herbs, rosemary, parsley, thyme, cumin, and parsley. and seared it off. I roasted it with some potatos and rutabaga. i roasted some fresh eggplant, yellow squash, zucchini, brussel sprouts, onions, and mushrooms just splash some olive oil on and sea salt and pepper. i cooked down some blackberries and strained them, and added some stock from the loin, and a little butter to make the sauce.
