PHOTOS AND RECIPE SUBMITTED BY Amanda Layton
I mixed (with a knife) 1 cup plain flour with 1 cup of Self Raising flour, add an egg, a pinch of salt and enough water to make a soft sticky dough. Dropped 3 or 4 tablespoon fulls into hot oil in a pan.
Cooked on a medium to low heat, (just enough to keep the oil bubbling but not enough to burn the scones) Cook for roughly 5 minutes a side or until you see where the holes are showing through to the top.
When you flip the scones, press down to flatten slightly. ( this is the second side because it looks better than the first)
