We made the Chocolate pumpkin muffins for after dinner tonight…everyone is loving them…that is the one box of cake mix, one 15 oz can of pumpkin puree, mix together and bake in mini muffin pans…not to sweet and a nice treat for everyone…

it is super simple…just what I posted: one box of cake mix…I prefer Chocolate, 1 can of pumpkin puree (15 oz), mix together well…prepare mini muffin pan with just a touch of oil in each cup…drop by teaspoon fulls into each cup…bake at 350 for about 10 minutes…do watch these, as you don’t want them to dry out by over baking…I generally get about 48 mini muffins per batch. I believe this is a Weight Watchers recipe…it is low fat, and about 150 calories for 3 muffins. (the muffin cups do not need to be much more than 1/2 to 3/4 full before baking).
my favorite weight watchers recipe is chocolae pumpkin muffins…right?…lol…you take one box of chocolate cake mix…dark or regular and one cane of pumpkin puree…mix together pour into mini muffin pan and bake for like 10 to 15 minutes…but check to be sure they don’t over bake…at 350…they are so good and three of them are like one point or something…yum!
