So I am gearing up to try out frog legs for the first time.. my mom, dad, hubby, and various other members  of the family have already tried them and enjoyed.. so I think it is time for me to try them.. I love trying new things anyways.. I got a great recipe book for Christmas this year, Duck Dynasty’s Miss Kay’s Kitchen. In it she shares her Fabulous Frog Leg Recipe.. I am using that today.

 

DUCK DYNASTY’S FABULOUS FROG LEGS


Makes 2-3 servings – large cast iron skillet- Dutch oven

6 large or 8 medium frog legs

3 cups buttermilk

2 large eggs

3/4 cup beer ( 1/2 bottle or can)

3 or 4 dashes hot sauce

1 tbsp Worcestershire Sauce

2 Tbs spicy mustard

salt and black pepper

2 cups all purpose flour

1/2 stick (4 tbsp) butter

6 tsp olive oil

3 green onions or scallions, thinly sliced

1 tbsp chopped parsley

8 -12 whole garlic cloves peeled

Duck Commander Cajun Seasoning ( mild or zesty) or other cajun seasoning

if you don’t catch them, you can buy them..

 

In large bowl, cover frog legs with buttermilk

  • Marinate 1 hour

(while it marinated for an hour I made a quick beer bread that takes only one hour to bake- recipe is on my site)

I put a plate on mine to keep it down as it set in the butter milk

Go ahead and mix up your egg mixture

Mix together the eggs, beer, hot sauce, Worcestirshire Sauce, Spicy Mustard, and salt and pepper to taste

and get your flour ready


  • then drain,


  • return the frog legs to the bowl and pour the mixture over the frog legs.  Make sure they are coated completely.

 

Heat the oven to 300 degrees

get out a large cast iron skillet, melt the butter in 4 tbsp of the oil over med heat.


One at a time, take out the legs and roll each leg in the flour.


Shake off excess

Cook the frog legs turning once.,

until golden brown on both sides (2 -3 minutes per side).

 

Remove from the skillet and drain lightly.


Pour the remaining 2 tablespoons of oil into the bottom of the dutch oven, then add the frog legs.

Cover them with the green onions, parsley and whole garlic and sprinkle with Cajun Seasoning to taste..

Cover with a lid and bake for 15 -20 minutes till frog legs are tender.




We enjoyed with seasoned french fries, some beer bread, and some Sweet Baby Ray’s BBQ Sauce for dipping.. the kids had some pizza too cause I was unsure if they would like it.. but it went over great!!!!!
