CRANBERRY JELLO SALAD

Cranberry Jello Salad
1 lb. fresh cranberries, grated
2 C Sugar
1 or 2 cans mandarin oranges w/ ¼ C of juice
¼ C lemon juice
½ tsp. salt
1 C crushed pineapple w/ juice
3 small boxes of red jello
3 C water
1 C nuts, optional
Grind or grate cranberries. Mix well with sugar and let stand overnight. **To skip this process, I microwave the cranberries and sugar in the microwave on low until the sugar is completely dissolved, stirring occasionally.
Dissolve jello in hot water and let cool; set aside.
Mix together pineapple with juice, lemon juice, salt and let it set aside 5-10 min. so the jello will set.
Mix all ingredients together, add nuts if desired. Pour into 9 x 13 glass or corningware pan. Put in refrigerator to set.
**You can use any flavor of red jello, even cranberry. I prefer using Red Raspberry.
