3 1/2 lb broiler-fryer chicken, cut up

2 c water

1 garlic clove finely chopped

2 tsp salt

1 lg bay leaf crumbled

2 lg celery stalks with leaves cut diagonally making about 1/2c

1/2 c chopped onion 1 28 oz can whole tomatoes

1 10 oz pkg frozen okra

1 7 oz can whole kernel corn

1/3 c regular rice, uncooked

1/2 tsp red pepper sauce

Heat chicken pieced water salt garlic and bay leaf to boiling in dutch oven

Reduce heat cover and simmer till chicken is done about 45 min. Remove chicken from broth strain broth. Refrigerate chicken and broth when cool remove chicken from bones and skin. Cut chicken in bite size pieces. Skim excess fat from broth and place broth and chicken in dutch oven. Stir in celery onion and tomatoes with liquid. Break up tomatoes with fork Heat to boiling point reduce heat cover and simmer until okra and rice are tender 20, 30 min. Garnish with parsley.
