This recipe is a great way to make a romantic breakfast in bed for your special someone on Valentine’s Day.  

For pancakes: 

2 cups complete (just add water type) buttermilk pancake mix

1 1/4 cups water

1 cup small curd cottage cheese

1 tablespoon sugar

1 teaspoon vanilla extract 

For syrup: 

1 cup maple syrup

1 cup sliced strawberries

1/2 teaspoon lemon rind 

Directions: 

Preheat griddle. 

Combine the pancake mix, water, cottage cheese, sugar, and vanilla extract in a medium bowl; stir well until blended. 

Pour batter by 1/4 cupfuls onto hot, well-greased griddle.

Flip pancakes when tops are covered with bubbles. 

For Strawberry-Lemon Syrup: 

Combine the syrup, strawberries, and lemon rind in a small saucepan and heat through, stirring occasionally. 

OTHER SUGGESTION FOR SYRUP OR PANCAKE TOPPING (WITHOUT MAPLE SYRUP): 

Make syrup without maple syrup by thawing a package of frozen strawberries and heat in pan with lemon rind. You can also add a teaspoon of orange juice if desired. If you use this topping for pancakes, you can also add a dollop of whipped cream if you want.
