BUTTERY JAM TARTS


 

2 1/2 cups all purpose flour

1/2 cup sugar

2/3 cup butter softened and cubed

1 egg

1/4 tsp baking soda

1/4 tsp salt

2-3 Tbsp milk

1 tsp almond extract

3/4 cup preserves (any kind you like cherry, blackberry Pineapple Orange ECT….)

Sugar white or colored for sprinkling

  • Preheat oven to 350 degrees

In a large mixer bowl add flour and sugar

cut up butter and add to bowl

add egg

add baking soda, salt, milk and almond extract

beat at low speed. scrape bowl often, till well mixed. looks crumbly but when you put it together iwth hands it is a dough..

Roll out dough (half at a time is easier) on well floured surface

to about 1/8 inch thickness or so

Cut with a 2 inch to 2 1/2 inch circle cookie cutter (save scraps and put with the other half of cookie dough waiting to be rolled out)

you will need two cut outs to make one cookie.

on one cookie place a dab of preserves that will be your bottom.

on the other half cut out a heart, diamond, circle, star, or just a X with a knife

place over top of the bottom cookie and using a fork that has been dampened with water, go around edges to seal.

Place on cookie sheet  2 inches apart.

Sprinkle with granulated sugar, plain or colored.

Put into oven

and bake for 11 minutes.. JUST till edges are very lightly browned.  remove immediately then cool

display and enjoy
