RECIPE SUBMITTED BY Laura Humphrey
Dinner tonight, something I would have never expected myself to make, especially with the spice factor, but it is one of those recipes that is good now, but you know you’ll be paying for it later. (unless you enjoy spice THAT much, or are less then a wuss then I)

Blackened Tilapia Fillets

1 TBS paprika
1 tsp garlic salt
1 tsp cayenne
1 tsp pepper
1/2 tsp thyme
1/2 c butter 4 tilapia fillets

Preheat large heavy skillet over medium high heat. In shallow dish combine seasonings. Spread melted butter over fish on both sides with brush. Then coat in seasoning mixture. Arrange fillets in skillet , cook 2 minutes per side or until fillets are blackened. Season with salt.

Yummy, yum, yum! Even my extremely picky toddler, who has been known to eat NOTHING, ate all of this and loved it! She did have to keep coming to me for more milk since her mouth was on fire but she ate her dinner! Mom: 1, Child, 201.
