Basic Sweet Batter for Dessert Fritters

1 cup sifted all purpose flour

1 tbsp sugar

1 tsp baking powder

1 tsp salt

2 eggs

1/2 cup milk

1 tsp salad oil

1/2 tsp vanilla

1 tsp grated lemon peel

Beat eggs, salad oil, and milk till very smooth. Refrigerate 30 minutes. Batter should be consistency of heavy cream.

Melt 1 tsp butter in skillet. Pour in about 1/2 tablespoons of batter. Rotating pan quickly to spread batter completely over bottom of pan,
