Cake:

2 cups all purpose flour

2 cups granulated sugar

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon (optional)

½ teaspoon cloves (optional)

½ teaspoon powdered ginger (optional)

8 ounces (2 sticks) butter (No margarine)

3 Tablespoons unsweetened cocoa

1 cup water

½ cup buttermilk (or ½ cup milk soured with1 Tablespoon vinegar)

2 eggs

1 teaspoon vanilla extract 

Preheat oven to 350o F 

In a large mixing bowl, mix together the flour, sugar, baking soda and salt until well combined.

Melt the butter, cocoa and water together in a saucepan and bring to a boil for one minute.

Add the melted mixture to the dry mixture and stir to combine.

Add the buttermilk, eggs and vanilla and stir to combine. (The mixture will be very runny.) 

Grease and flour a quarter sheet pan or 9 inch rounds and bake at 350o F for twenty minutes. 

Icing:

Equal parts Butter, Brown Sugar and add 2 tablespoons for cocoa and ½ teaspoon clove (optional).

And cream together, Turn on high the last couple of minutes to increase make it easier to spread.
