I’ve only seen one White Chili recipe on here so far and mine is a little different so I thought I’d post it too. This recipe is a LARGE batch that feeds 7-8 hungry people with some left over for freezing:

WHITE CHILI

Ingredients:

2.5 lbs chicken breast, boiled, diced

4 cans white corn, drained

4 cans Northern beans, DO NOT DRAIN

2 cans diced green chilies

4 cans (14.5 oz size) chicken broth

16 oz pepper jack cheese, shredded or cubed

6 or 8 green onions, diced

3-4 Tbsp cumin

2 Tbsp lemon juice

2 Tbsp minced garlic (from a jar)

Directions:

line LARGE crock pot with slow cooker bag. Add 2 cans chicken broth, lemon juice, garlic, cumin. Stir until cumin is thouroughly disolved. Add all remaining ingredients except 1 can of chicken broth. Mix well. The crock pot should be nearly full, add remaining chicken broth until you run out of room. Cook on high heat 4 hours, stirring once every hour. Serve with cream.

Crackers work well with this chili but I also like to use Tostitos Scoops tortilla chips.
