VANILLA WAFER CAKE

 

5-6  eggs room temp

1 stick butter room temp

1 cup sweetened flaked coconut

1/2 cup sweet milk (regular 2%)

1 whole 12 ounce box vanilla wafers

2 1/3 cups granulated white sugar

1 cup pecans optional

1/2 tsp salt

1/2 tsp baking powder

Beat eggs  and set aside.

Crush vanilla wafers.

add wafers and all other ingredients into eggs to form a batter will be lumpy

Pour into greased and floured bunt pan

Bake at 350 for about 50 minutes to an hour.. it is supposed to be a moist cake so don’t over bake it..just watch and take it out when inside is set and done.

Can be glazed or left plain.
