1-6 ounce can white albacore tuna (packed in water), drained…
1 Tbsp. honey mustard…
2-3 Tbsp. mayonnaise
1/3 cup finely chopped celery…
2 Tbsp. finely diced red onion…
2 apples of your choice…
1 lemon…
Kosher salt and fresh ground black pepper, to taste.
.. Place  drained tuna in a bowl, stir in mustard, mayonnaise, celery and onion, set aside.
Slice off the top of each apple.
Cut a slice from the bottom of apple.
Scoop out the inside of the apple , chop apple scooped out and mix in bowl with tuna, rub the cut sides of apple with fresh cut lemon to help prevent browning of cut apple.
Add salt and pepper to taste to tuna mixture. Mix well.
Place apples on plate and fill with tuna mixture, about 1/2 cup each apple. Place top slice of apple with stem on top of filled apple,serve immediately.
Serves 2.
