PEACHES 

Fresh unbruised peaches will keep a week in the refrigerator. For full flavor, let them come to room temperature before eating. 

Much of the flavor is found in the skins, Out of hand eating of peaches is fruit at is best. 

For easy peeling, pour hot water over peaches, let stand one minute and then slip off the skins. Cover with Citrus juice (2 heaping teaspoons of instant orange drink in 2/3 Cup of water) to prevent discoloration. 

Don’t peel defuzzed peaches. The skin has the vitamins and minerals. 

A bushel of peaches will yield either 20 quarts or 40 pints canned or frozen. 

Plan 15 pints per person for summer goodness all year long.
