5# cheap hamburg 
3 TBSP tender quick salt ( buy at Farm bureau )
21/2 TBSP mustard seed 
2 TBSP pepper
11/2 TBSP garlic salt 
11/2 TBSP Hickory Smoke salt 
Mix thoroughly ..cover.. & refrigerate.
Kneed once daily for 3 days 
on 4th day – form into 3 roll .6 inches long 
Bake at 150 degrees for 10 hours 
( COOK IT ON A BROILER RACK ) 
freeze or eat.
