  • BASIC MUFFIN 

    1 egg

    1 c milk

    1/4 c salad oil

    2 c all purpose flour

    1/4 c sugar

    3 tsp baking powder

    1 tsp salt 

    heat oven to 400 Grease bottoms ONLY of 12 med muffin cups

    in mixing bowl beat egg slightly with fork

    stir in milk and oil. Add remaining ing all at once mixing just till flour ins moistened. Batter will be lumpy. Fill muffin cups 2/3 full. Bake 20-25 minutes or until golden brown. Immediately remove from pan Serve Hot.. 

 

 

FOR FRUIT MUFFINGS just fold ONE of these ingredients into the batter to basic batter recipe listed above with the LAST few strokes.. 

1 c fresh blueberries or 3/4 cup drained canned blueberries 

1 c finely cut up raisins 

1 c finely cut up dates 

1 c shredded coconut 

1 c chopped apple 

 

FOR DINNER MUFFINS use Basic Recipe and fold into batter ONE of these ingred with last few strokes 

1/2 c Shredded sharp CHeddar cheese

1/4 c snipped chives

1/4 c crispy fried bacon 

FOR CHILDRENS SURPRISE MUFINS use Basic recipe and fill each muffin cup just 1/3 full and drop 1/2 tsp of jelly in center of each top with batter to fill cup 2/3 full. 

FOR CRUNCH TOPPED MUFFINS use basic muffin recipe and mix 1/4 c brown sugar (packed0 1/4 cup chopped nuts and 1/4 tsp cinnamon in small bowl. Fill muffin cups 2/3 full with batter sprinkle sugar mixture over each cup.
