Crock Pot Beef Roast 

1 beef roast

1 pkg carrotts (I prefer bunny luvs)

3- 4 small to medium potatoes

Salt

Coarse Ground Pepper

Minced Onion

1 pkg. French’s onion soup mix (optional) 

I always rinse off my meat. Spray crock pot with pam. Add a cup or two of water (depending on size of crock pot) and the French’s onion soup mix. (Most of the time I don’t use the soup mix) Place Beef in crock pot. Sprinkle beef with Salt and lots of coarse ground pepper and minced onion. Cover and let cook about eight hours on low. Skin potatoes and Carrots. Cut carrotts into chunks. Leave potatoes whole. Add to crock pot 2 hours before roast is done. Very good. I have added the vegetables in the morning and it still turns out good but the potatoes are a little too soft for my liking.

I always save the water and make French onion soup with it a couple days later.
