Sweet Potato Fries

I just cut them up into wedges

and deep fried them.

I had a mixture of cinn, white sugar, and when done I shook heavily with the sugar mixture.. then used the coarse salt and a teeny weeny tad (a hint) of ground red pepper . Served them with maple syrup.. just regular pancake syrup to dip them  in and they were a HIT…

only thing I didn’t like was I wanted them more crispy and so I did some research and sweet potato fries are notorious for having a hard time getting crisp.. one lady said that she took them and shook them in cornstarch first before tossing in olive oil and baking in the oven and they were crisp so I will try her method too…

but even still they are GOOD.. they got the salty and sweet thing going on.
