Spiced Pumpkin Bread 

3 1/2 cups flour 1 tsp cinnamon

3 cups sugar 1/2 tsp cloves

2 tsp baking soda 4 eggs

2 tsp salt 1 can (15 oz) pumpkin

2 tsp allspice 3/4 cup veg oil

1 tsp baking powder 2/3 cup water

1 tsp nutmeg 

In a large bowl, combine the dry ingredients. In another bowl, combine eggs, pumpkin, oil and water; mix well. Stir into dry ingredients just until moistened. Pour into 3 greased loaf pans. 

Bake at 350 for 50-60 minutes or until a toothpick inserted neat the center comes out clean. Cool for 10 minutes before removing from pans to wire rack to cool completely.

YIELD 3 loaves. 

 

I play around with the spices sometimes I like to add more cinnamon and nutmeg. You can always use brown sugar if you don’t have enough white sugar, it actually adds moisture. Cloves are strong so I usually put about 1/4 tsp.
