(DO NOT USE CANNED PEAS FOR THIS..YUCK)

1 PACKAGE FROZEN PEAS SET OUT IN A BOWL TO THAW

mayo

chili powder

some chopped red onion

1 or 2 boiled eggs cooled and sliced (can do 3 for real creamy salad)

little bit of sharp cheddar cut into little chunks (can use shredded)

bacon bits (optional)

I’ve sped things along by thawing the peas in the microwave on low defrost, but you do not want peas cooked, you want them plump & uncooked as this leaves them bright green and sweet tasting. I’ve had children who hate veggies eat my peas &I’m convinced all they ever tasted before was canned, so no wonder they were so surprised veggies like peas can taste so good!

 

 

Use a few heaping TBLSP.’s mayo, stir lightly till all the peas look coated, now add chopped red onion, no more than a TBLSP or so,about a 1/4 cup cheese, and take sliced egg slices, reserving a few for the top off to the side, but mix the rest in,;stir together lightly then sprinkle with chili powder and stir again lightly. Once you’ve finished mixing place some slices of egg on top and sprinkle some more chili powder for decoration. Can add bacon bits if desired. Chill everything for 15 minutes or longer. I have made this the night before using frozen peas then stirred everything together and set back in fridge overnight, but always freshin it up with a dollop more of mayo before serving and make sure peas are fully thawed too! That’s why this is a picnic dish, it can be taken in hotter temperatures as it thaws and remain cool by the time everyone eats!
