SOUTHERN ORANGE SLICE FRUIT CAKE

This recipe my momma got over 40 years ago from her friend Marlene Sizemore. After tasting Marlene’s cake, mom just had to have the recipe. Mom didn’t make it often, usually around holidays. I had almost forgotten about it until I seen one online and I was telling mom about it.. mom said I have that recipe. And sure enough she did. Here it is. I am baking it for the first time. I told mom although I am not a fan of fruit cakes, I will try the recipe like she has it the first time and then my second time I will add or take away to my liking to make it what I would like haha… here you go guys. Let’s try her out.

1 c. pecans (chopped)

1 c. Sugared Orange Slices cut in small slices (I also added 1 c orange candied orange peel)

1 c. dates cut up

1 1/2 c/ glazed candied fruit

1 c. English walnuts chopped

1 c shredded sweetened coconut

1 -or 2 c. raisins

1/ 2 tsp salt

2 tsp rum

2 tsp vanilla

1 cup buttermilk

1/2 tsp baking soda

2 1/2 cup all purpose flour

2 sticks butter

2 cups sugar

4 eggs

Topping

2 c sugar

1/ 2 tsp rum flavoring

1/2 c. orange juice

To make cake:

Add 1/2 c. sugar to bowl of candy and nut meats. mix well. add 1/2 cup flour to the bowl of candy and nut meats and mix well.


In separate bowl. Cream the rest of sugar with butter and add eggs one at a time.

Add salt and flavorings to the creamed mix.

Dissolve Baking Soda in the Buttermilk and add buttermilk and flour to the creamed batter alternating both.

Now I begin to add a cup at a time, the fruits and nut mixture to our creamed mixture. Will be a thick batter.

mix well. Treat your removable sponge cake pan with crisco. You can also add parchment paper and lightly grease it as well for extra protection. The cake can get stuck easily.

Bake at 300 degrees Bake 1 hour 50 minutes. till edges come loose

Loosen edges with knife , when done. Prick top with knife

Mix Orange Juice & Sugar bring to boil for 1 minute take off heat add Rum

Pour over warm cake can leave a little to put around sides if taking out same night ..if letting stand over night just pour it all over

let stand overnight then remove from pan, add pecan halves and red cherries on top if desire. (I took mine out same night though and its already too rich for me so I didn’t need red cherries and pecans to put on top)

You can make this cake early and it should be moist and last you well. It is VERY rich so you will cut thin slices. good with coffee.
