NOTE: This is an old Southern recipe. It dates back to Civil War days.

1 c. quick Quaker oats

2 c. boiling water

1/2 c. molasses

1 tbsp. salt

1 tbsp. shortening

1 pkg. yeast

1/2 c. warm water

6 c. flour (or a little more) 

Put the oatmeal, boiling water, shortening and salt in a large bowl. Stir and let cool. Add molasses. Dissolve yeast in the warm water and add to the oatmeal mixture. Add flour gradually until all is used up. Let rise until double in bulk. Knead down and put into 2 bread pans, greased. 

Let rise again about 1 1/2 hours. Bake in a 350 degree oven for 50 minutes.
