SOFT PRETZELS

1 envelope of yeast (1 Tbsp)

1 tsp sugar

2 tsp salt 4-5 cups flour

Butter as needed

4 tsp baking soda

coarse salt for sprinkling

Dissolve yeast in 1/4 cup warm water in a bowl.

then stir in additional warm water and sugar. add salt.

Beat in flour to make stiff dough

Knead for 10 minutes

or until dough is elastic.

Place in bowl and spread with butter. Cover and let rise 45 minutes or till doubles in size.

Shape in sticks or twists and make 1/2 inch thickness of pretzels

Bring 4 cups water to a boil

with baking soda added to water, drop three pretzels in at a time.

boil one minute or until they float

Remove and drain. Place on buttered cookie sheets

sprinkle with coarse salt

bake at 475 for 12 minutes or till golden brown.

if you want crisp pretzels, lay them on a cookie sheet in a warm oven 200 degrees for 2 hours.
