Recipe Translated:

Shrimp with Cognac/lentil creme w/thyme: 1/2 lb small lentils (well rinsed), 30 med. shrimp peeled and deveined, 1 small carrot, 1 celery stalk, 1 shallot, a piece of leek (or use green onion), 2 garlic cloves, fresh thyme, extra virgin olive oil (EVOO) Cognac, Salt/coarse black pepper. Saute carrot, celery, shallot, leek pcs, and 1 clove garlic in a large pan with little EVOO. Add cleansed lentils and cover with plenty of water, simmer 40 minutes covered.(add water as necessary),add leaves of thyme.Use immersion blender until lentils become a creme. add salt to taste and plenty of cracked black pepper…meantime saute shrimp in a little EVOO and one whole garlic clove..add 2 fingers of cognac (do not overcook the shrimp) at time of service heat creme of lentils…spoon into bowls, place 3 shrimp on top/garnishwith sprigs of thyme and serve immediately.
