Serena’s Sweet Potato Pie


makes 2 pies

First off make your pie dough and wrap in plastic wrap and put in fridge

next you want to take about 3 lbs of sweet potatoes. (about 6)

peel and cube and boil till tender.. then drain

take sweet potatoes put in mixer add 3 Tbsp butter

mix well

add 1 1/2 cup white sugar

add 1/2 tsp cinnamon

1/2 tsp nutmeg

a pinch of cloves

tsp vanilla extract

1/2 cup packed brown sugar

1/2 cup half and half milk

now add in 5 eggs as you mix

Pour into unbaked pie crusts..

bake at 375 -400 degrees for 50 minutes

take out and let cool on block then put in fridge to get totally cold.. best to let set in fridge 24 hours…

serve cold or heat a slice in the microwave (I like it warm best) but must be stored in fridge.
