conjured up some soup today and I am sitting here eating THE BEST SOUP ever.. LOL… I call it my “leftover soup” …. I am known for saving things from other meals that have been untouched .. freezing them or refrigerating them and reusing them later in some way… TODAY was one of those days.. I started out making my regular potato soup I always make..but ended up here… I am telling you it is delicious

it has Cheeses,(mozzarella and cheddar)  Philly Cheese Steak, Onion, small amount of leftover Shredded chicken from my Rotisserie I had the other night, some of the onion and red and green pepper with mushroom I had saved that I used on my philly Cheese steak Sandwiches ….. hmmmmm what else… oh I used a can of cream of celery and a can of chicken with rice soup a whole onion diced.. potatoes, water, cornstarch with water mixed then added to thicken. a can of evaporated milk, a stick of butter salt pepper…

start out with a lot of peeled chunked potatoes in a tall stock pot… fill a bit over halfway with water add 1 can of chicken with rice soup (if don’t have that add some chicken broth same effect almost)

add your chopped whole onion.. (if you have celery I would chop up a stalk or two small and add)

add salt.. let boil then put lid on and turn down heat as it softens potatoes.. once potatoes are soft take off lid.. add 1 stick butter , 1 can evaporated milk, salt pepper, 1 regular can cream of celery soup.

stir may want to squash down some large potatoes smaller ..I always  leave some chunky though.. .

you now at this point mix in a separate cup some cornstarch with  a small amount of water.. pour into the soup.. this is your thickening agent.. if it is not enough.. do it once more… stir after each time… you don’t want it to thick.. remember.. soup always gets thicker once it sets and the heat is turned off…  I added 8 slices of regular Cheese

NOW I added some of my leftovers.. I had some shredded chicken from my Rotisserie I used that… I also added some of the Philly Cheese Steak to it… I added some Mozzarella cheese, or whatever you got…

I also had a bit of red pepper , green pepper, onions and mushrooms I had fried the day before in butter for my toppings on our Philly Cheese Steaks… you CAN add this.. or not.. your choice I added a little of it.. and MAN it was good….made me an extra Philly Cheese Steak Sandwich with leftovers from Yesterday… a bowl of this soup and I was in HEAVEN… yummy….
