Some days you are in a hurry.. you want to get it done fast but still taste amazing am I right?

Today was that day. I was Christmas Shopping for mom, trying to get groceries and I remembered hey we need supper too and like fast. I remembered I had just bought her a rotisserie chicken the day before and my plan was for a quick soup.. only I knew momma would not be happy with that so I compromised… I wouldn’t use a whole chicken like Paw Paw Tony did.. today I would just grab some chicken legs for my base to help build my stock .. it wouldn’t take as long and I happened to remember how wonderful our Turkey Carcass Soup was and how I had added the turkey breast and gravy it had cooked in, it made for a delicious broth.. not thick and not thin.. just perfect for today’s snowy day. Suddenly my Semi Homemade Creamy Chicken Soup was born. ..

SEMI HOMEMADE CREAMY CHICKEN SOUP

1 small package of chicken legs (skin on)

whole rotisserie chicken (pull off meat discard the rest and set aside for later)

4 carrots cleaned and chopped

3 stalks celery with leaves chopped up

I onion chopped up

Water

Black Pepper

Crushed Red Pepper

Parsley

Sage

3 bay leaves

Salt

Petite Diced Tomatoes with Basil, Oregano Garlic

Egg Noodles

and surprise – Yes.. a family size can of cream of chicken soup

I just filled my stock pot over a little over half way with water and added my chicken legs

I added my cut carrots, celery, onion, a good amount of black pepper, some salt, and my bay leaves

later I add to my broth a pinch of crushed red pepper and I add in some parsley

once the chicken legs are cooked through I add in all the rotisserie meat.

Add in a little Sage

add in your diced tomatoes infused with basil and orgegano

put your egg noodles on to boil (yes you can boil them in the same pot but sometimes I like to do it separately and add at the very end)

Add in your last ingredient before the noodles

Add in your cream of chicken soup. stir it in completely until all traces of it are throughout the soup.

It instantly gives it a little creaminess and the kids really like it. Don’t get me wrong Paw Paws home version with clear broth is always gonna be my go to recipe but this is great for a change and a QUICK change at that when I need it in a pinch. It is different enough that it makes it interesting but still has that depth and comfort of a home cooked soup.
