3 egg whites
1 (1lb. box) confectionary sugar
1/2 tsp cream of tarter
food coloring (optional)
beat at low speed until blended
increase mixer speed two high and beat 8-10 min
till mixture holds a peak.
Cover with a damp cloth when not in use.
Separate into bowls and add food coloring if desire.
will store 3 days in fridge in airtight container
