2 Tbsp exra virgin Olive Oil

1 cup chopped green onions or shallots

4 1/2 cups chicken stock

2 cups chopped jarred roasted red peppers

2 (14 1/2 oz) cans of whole stewed tomatoes

1 tsp granulated sugar

1 1/2 tsp dried basil

salt

pepper

sour cream for serving if desired or shredded cheddar cheese and crackers 

Warm the olive oil in large heavy saucepan over med heat. Add the green onions and saute until soft. Add the chicken stock red peppers tomatoes sugar and basil bring to boil then reduce heat cover simmer for 15 minutes 

Remove tomatoes and peppers with slotted spoon and transfer to blender or food processor. Blend till smooth return to liquid. season to taste with salt and pepper. garnish with favorites..
