Clean goose well. Stuff with stuffing and butter. Place breast up on rack in shallow roasting pan. Pour 2 cups boiling water over and cover. Roast at 325 for 25-30 min per pound. Prick legs and wings with fork so fat will run out. Roast uncovered last 15 min (To remove excess fat Goose may be precooked before roasting.)
