1 1/2 Cups flour

1/2 teaspoon of salt

1 Cup sugar

1 teaspoon baking soda

1 Cup canned pumpkin

1/2 Cup oil

2 eggs, beaten

1/4 Cup hot boiling water

1/4 teaspoon nutmeg

1/4 teaspoon cinnamon

1/4 teaspoon allspice

1/2 Cup blonde raisins

1/2 Cup chopped walnuts (optional)

Directions:

Preheat oven to 350 degrees.

In a small bowl, put raisins and hot boiling water. Let stand until raisins have softened and plumped up. Set aside.

Sift together the flour, salt, sugar, and baking soda.

In a separate bowl, mix together the pumpkin, oil, eggs and spices. Stir in dry ingredients thorougly, but be careful not to over mix. Stir water and raisins and combine well. Stir in nuts (if desired).

Pour batter into a well buttered 9x5x3 inch loaf pan.

Bake 50 to 60 minutes until a knife inserted in the center comes out clean.

Remove bread from pan and cool on a rack.

Makes one loaf.
