PISTACHIO CRANBERRY COOKIES

1 box of yellow cake mix.

1/2 of a small box of instant pistachio pudding and pie filling (approx 1/3 cup)

2 eggs

1/2 cup oil

1/4 cup cranberries, chopped

1/2 cup pistachio nuts, shelled and chopped

1/2 cup white chocolate chips

In your mixer, combine cake mix, pistachio pudding, eggs, and oil until just blended.
Stir in cranberries, pistachios and white chocolate chips.
Scoop rounded tablespoons of dough and place on parchment lined cookie sheets.
Bake in 350º oven for 12 to 14 minutes, until edges start to become golden in color.
Leave in pans for a few minutes, then transfer to a cooling rack.
Yields: 2 dozen
