PINEAPPLE COCONUT CAKE

1 16oz can crushed pineapple , drained and reserve the juice

1/2 c butter

1 c sugar

2 eggs

2 c self rising flour

(if using all purpose add 1 tsp salt and 1 tsp soda)

3/4 c brown sugar

1 c chopped English walnuts or pecans

1 cup shredded coconut

cream butter sugar and eggs.

add mixed dry ingredients alternately with reserved pineapple juice

mix well and fold in pineapple. pour into greased and floured well 9×13

combine brown sugar nuts and coconut

sprinkle over top of batter

COVER with foil and bake at 350 degrees for 20 minutes. Remove foil and bake 20 minutes longer.
