Pineapple Coconut Cake

2 1/2 cups crushed pineapple

3 cups sugar

2 1/2 cups flour

1 tsp soda

1/2 tsp salt

2 large eggs

1 cup oleo

1 cup evaporated milk

1 cup flaked coconut

1/2 c chopped nuts

 

combine pineapple with juice , 1 1/2 cups sugar, flour, baking soda, salt and eggs in large bowl.

mix for 3 minutes with spoon. grease and line 8×12 inch pan with 2 wax paper

our batter into pan bake 30 minutes. cool in pan 15 minutes

turn onto rack. combine remaining sugar oleo, and milk in heavy saucepan bring to boil.

stir let boil for 4 minutes without stirring. remove from heat

stir in coconut and nuts.

Let cool beat until ready to spread. frost cake

chill

garnish with cherries if desire
